Update dir-spec for new compression options

The existing appendix only mentions gzip:

I don't see gzip mentioned in dir-spec at all; only zlib/deflate. I'll try writing something here.

Oh! Do we mention that HS downloads should be zlib/identity only somewhere? If not, we should.

It wasn't mentioned anywhere, no, but the current document looks good to me. Maybe add the HS section as an extra patch?
