DIsable Stem and Nyx trac components

Hi lovely trac admins. I migrated to GitHub for Stem and Nyx's issue tracking. All Stem and Nyx tickets within trac are now closed.

Could we please remove Stem and Nyx from the Component drop down so new tickets are not created?
